Healthy Peanut Butter Banana Brownies

Ever had some really overripe bananas to use up but you don’t feel like making banana bread? Well, that was me today. What I really wanted was a chocolately treat that wasn’t going to affect my waistline. I’m always on the quest to find the perfect chocolate brownie and I’ve made some darn good ones in my time! Whilst this didn’t quite have the fudgy quality of a traditional brownie, it was delicious, healthy and used up those overripe bananas! Plus, because it was gluten-free, oil-free, low GI and practically sugar-free I HAD to go back for seconds…😉

This is actually a recipe from the Forks over Knives app which I can highly recommend! It costs just £4.99 and there are over 400 healthy plant-based recipes on there. It’s really user-friendly and you can ‘favourite’ recipes and even add ingredients to an inbuilt shopping list.

Ingredients:

  • 2 TBL flaxseed meal
  • ¾ cup whole pitted dates 
  • ½ cup mashed bananas (I accidently used 3 bananas but it was yummy!) 
  • ½ plant based milk
  • ¼ peanut butter (or any other nut butter you have)
  • 2 tsp vanilla extract
  • 1 cup quick cooking oats
  • 1/3 cup cocoa powder
  • 2 TBL brown sugar (or whatever you have)
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • Add ins: Chopped walnuts, dark choc chips. I added these but you don’t have to! 

Method: 

  1. Preheat oven to 180 degrees c (350 F)
  2. In a small bowl combine the flaxseed with 6 TBL of water and stir. Leave for 5 minutes. 
  3. Place dates in a bowl with boiling water and leave for 5 minutes 
  4. In a food processor combine the flaxseed mixture, drained dates, mashed banana, milk, peanut butter and vanilla. Blend until smooth
  5. In a large bowl combine all the dry ingredients.
  6. Add the wet ingredients to the dry and stir
  7. Pour mixture into a silicone brownie pan or tin lined with baking paper. 
  8. Bake for 25 minutes or until puffed and set. Mine took 40 minutes! (Could have been the extra banana). Allow to cool for at least 30 minutes. 
  9. Serve plain or with icing sugar on top
