Fluffy Chocolate Pancakes

When I was growing up, every Sunday my dad would treat us all to his famous fluffy pancakes (complete with a secret ingredient!) Sometimes we would even have them for dinner if we felt like it! Suffice to say, pancakes became a staple in my life and when I became vegan I was determined to find the perfect recipe that was as good as my dads. 

And guess what? It turns out that you don’t need eggs and dairy milk to make incredibly fluffy pancakes. In fact, there is no way that you could tell these were vegan and best of all they are so easy to make! 

Because I’m obsessed with my food being delicious AND healthy, I make these with a mix of white flour, wholemeal and buckwheat. They are just as fluffy but have the added benefit of extra protein and fibre and fill you up for longer. However, feel free to just use white flour if that’s all you have. Also, if you’re not in the mood for the added chocolate hit, leave the cocoa out! Or you could add chocolate chips into the batter instead. Have a play around, breakfast should be fun…

Originally I found this recipe on a blog called Chocolate Covered Katie but as always, I made a couple of tweaks. I hope you enjoy them as much as I do! 

Ingredients:

  • ½ Cup of Plain White flour
  • ½ Cup of Wholemeal flour 
  • ¼ Cup of Buckwheat flour
  • 2 ½ tsp Baking Powder
  • 1/8 tsp Bicarb Soda
  • ½ tsp salt
  • 1 TBL Coconut sugar (or brown sugar or white sugar!) 
  • 2 TBL Cacao or Cocoa Powder
  • 1 Cup Plant-based milk (I used soy milk but any works!) 
  • 2 tsp White or Cider Vinegar
  • 1 TBL Olive Oil

Method: 

  1. Mix all the dry ingredients together in a bowl. Use more or less cocoa powder depending on taste or leave it out if you don’t want chocolate pancakes!
  2. Stir in the wet ingredients, adding the milk in gradually while whisking it. You may need more milk, it depends how thick you want the pancakes to be. If you want thinner pancakes add more milk! 
  3. Leave the batter to sit for at least 10 minutes to thicken up 
  4. Spray a fry pan with a little oil, place on a medium heat and spoon the mixture on one at a time. Flip the pancakes once small bubbles appear and pop and the pancake is cooked on the edges. It’ll take a couple of minutes for each side
  5. Serve the pancakes with maple syrup, sliced banana or berries or even peanut butter!
