When I posted this pic to my social media I had so many requests for the recipe that I just HAD to include it on here as well! These are dead easy to make and totally give the illusion of having a full fat, hot cinnamon donut without the whole ‘fried’ thing going on. The problem is, I finished them off in one day! But that’s ok as they are so quick to make I will be whipping up another batch in no time! (And they are best eaten fresh anyway).
Amendments: I left out the butter in the batter. You don’t need it! However, I did brush them with melted butter before rolling them in cinnamon sugar as it did help it stick. (But you could leave this out for a lighter donut).
Hacks: I don’t have a donut pan so I use a muffin pan and then find something of a suitable size to cut the middles out! It then means you get big donuts and little mini ones so double the fun! Using a muffin tin it makes about 6 donuts. I can’t completely remember…it’s all a heavenly blur!

I made these with gluten free flour and they were delicious! I kept them in the oven for about twice as long to get them golden brown, but it was well worth it. Definitely making them again.
