Chocolate cake is like a warm hug for the soul and I have discovered the perfect recipe. It is rich, moist and oh so chocolatey and it actually gets better with age! The longest it has lasted in my house has been four days but each day it has tasted as good as the last. Now, this is not something I would make every week, it’s definitely a treat food but wow what a showstopper it is! Perfect for a special occasion or if you’re just in need of some comfort food.
Amendments: I only use 1 cup of sugar and it’s sweet enough! I also had to bake the cake a little longer in my oven (35-40 mins)
Hacks: Add 1/2 tsp of espresso powder to the chocolate icing. A hint of coffee brings out the chocolatey taste even more!
Icing Alternative: If you would like a lighter alternative to buttercream frosting I can highly recommend using my coconut cream frosting recipe. It’s creamy, light and not as calorie dense!
